This course runs over five Tuesday evenings 7 - 9 PM starting 8 June 2022.
Indian cuisine is as diverse as the soil, climate, local produce and ethnic groups that make up this large country. Clive's passion for Indian food was inspired by his grandmother, whose cooking was influenced by Portuguese migrants. He'll share her mouth-watering Indian dishes with you.
Menu
Week 1: Chicken Tikka with fresh salad and mint chutney
Week 2: Chicken Biryani. Biryani was brought to India by the Mughals and Persians. Clive will share his secret tips for making this amazing rice dish.
Week 3: Pork Vindaloo with steamed rice - a tasty, spicy dinner.
Week 4: Malvani Goat Curry with chapati. The Malvan region (between Goa and Mumbai) was a hub for the spice trade and there are many cococut plantations there. You'll learn to make authentic chapati (flat breads) to go with the curry.
Week 5: Chicken Lollipop - chicken wings in crispy batter with spicy sauce and salad. This is a recipe straight from Clive's grandmother's kitchen.
Your course fee includes all ingredients ($100). Each night you'll cook your recipes, learning chef Clive's expert tips and tricks, and you'll enjoy your dishes at the end of the class.
